Quickly mix together 500g of flour, 16g of baking powder, 4 organic eggs, 180g of butter or margarine, 8g of vanilla sugar, 200g of granulated sugar, and a pinch of salt by hand or in a food processor until a smooth dough forms. Wrap in clingfilm and leave to rest in the fridge for a good half hour so that the ingredients combine nicely.
In the meantime, peel and finely slice 10 tart apples with a little sugar, the juice of one lemon, a handful of raisins, 8g of vanilla sugar, a pinch of cinnamon, and – if you like – a dash of rum. Mix gently so that the apple slices remain intact.
After the time in the fridge, divide the dough into two equal pieces, roll out, and fill with the apple mixture. Carefully roll up, close well, and brush with a little cold milk.
Place in the oven at 180°C and bake for about 45 minutes until the strudel is golden.
